Rustic, Reliable, Ridiculously Good: A Sauce to Die For

I’m an avid home cook with just a sprinkle of delusion—I mean, who doesn’t pretend they’re a world-renowned chef in their own kitchen? Kidding… sort of. But honestly? I do think I’m not to bad in the kitchen. So I often experiment and sometimes I come out with real winners and other times it’s a complete flop. But this is a “sauce” I’ve been doing for years and it never fails me.

It’s rustic, a little sweet, tangy and light. It’s one of my favourite go-to sauces for when I have to make a quick pasta on the fly. And I usually have all the ingredients on hand, since they are staples in our home. And I find this is great with any pasta shape you like, so booooonus!

Now forgive me, but I cook like my Nonnas taught me, which is a pinch of that and a sprinkle of this, etc. So I’m going to try giving measurements to the best of my ability. Okay? OKAY! I’ll quit yapping now and get to it.

Recipe:

  • 2-3 Vine tomatoes, rustically chopped
  • 4-6 Garlic cloves, rustically chopped
  • 1 Very large Sweet Onion, rustically chopped
  • 1/2 Cup Olive Oil
  • Salt to taste
  • A pinch of black pepper, small pinch
  • Approximately 1 Tbsp of Garlic powder
  • Approximately 1-2 Tbsp of Italian Seasoning

Here are some side notes before we jump into the instructions.

  1. I usually like to mix different tomatoes, so if I have some vine tomatoes and cherry tomatoes, I will do a half and half mix. You can use any tomatoes you prefer though and adapt as you like.
  2. I LOVE garlic and my husband is secretly a vampire (just kidding), but the more garlic the merrier in our house. If you don’t enjoy a lot of garlic, cut down on the amount or if you do, add more.
  3. I like sweet onions, personally for this, because it balances out the acidity of the tomatoes, however if you have another type of onion on hand, use it! The only type I don’t recommend using is red onion, but again, try at your own risk!
  4. OLIVE OIL, please! You can use other types of oil, but if you are going to take the time to make this, than a really delicious olive oil is a must. It is the base of the whole thing so why not? Plus a good olive oil has incredible flavour.
  5. Spices and Herbs are pretty simple but if you wish to pack a bit of a punch, add some red pepper flakes while it’s cooking. Also fresh is best, BUT dried are completely fine and often what I use because it’s readily available. Be creative and adapt to whatever you enjoy.

Instructions:

  1. Roughly chop all ingredients and set aside. This is rustic, so it’s okay if things are different shapes and sizes. (Sorry I forgot to take a picture of the onions…oops!)

2. Preheat the pan and add THE oil. Heat will be medium to medium high. Once hot, add in the onions first and sprinkle with just a pinch of salt. This helps to draw out the moisture and caramelize them. Cook the unions until slightly tender.

3. Add the tomatoes, garlic and spices once the onions are slightly tender. Reduce heat to medium low and let everything simmer gently. When the tomatoes have softened slightly, which takes only a few minutes, you will then take the back of the spoon or spatula (whatever you prefer to use when you cook, I personally like wooden spoons) and crush some of the tomato chunks. Leave some whole chunks.

This is the time when you’d also taste test for seasonings. Add more if necessary. Just remember, you can always add but you can’t subtract.

4. The sauce is ready when everything is tender, which is approximately 15-20 minutes. It should look like the photo above. Also, take into account the amount you are making, timing could be different.

I do suggest that you begin cooking your pasta before the sauce is ready, usually when it’s about half-way through. Drain your pasta, add a bit of sauce to the empty pot, put the pasta back in and add the remaining sauce, mix well.

Plate into bowls for your family or guests. You can also reserve some of the sauce to place on-top of bowls for a little bit extra.

I can’t claim this as an original, I’m sure some other Italian came up with this deliciousness waaaaay before I even came along. However, this is my version so if you try it, I truly hope you enjoy it!

Sunshine & Self-Growth: Wrapping Up My Spring Goals

Let’s take a look at my list of goals and recap!

  1. Work on my health – both physical and mental
    • Well the physical is something I’ve definitely been working on. I have been walking and getting at least 10,000 steps a day (usually more on a really good day), but I am making a conscious effort on that front. Mental…well it’s a work in progress.
  2. Follow-up with the doctors regarding my genetic testing results
    • Did this as well and the doctor finally got back to me. All tests came back normal with no abnormalities or genetic issues to be found. Also, went over pathology for the baby.
  3. Pick-up and put together Valeria’s new bed
    • Well we definitely picked up the bed and put it together, but I will give a further update in a separate post. But yup, this was completed!
  4. Buy a cute twin bed set for Valeria
    • Well, I did buy an adorable twin set for her bedroom, however I had to turn around and buy a full size bed set instead. That will come with the bed update.
  5. Decorate Valeria’s room
    • Completed this one as well! Her adorable stickers are on the wall and she is obsessed!
  6. Print some photos for the house and for relatives
    • Nope….I didn’t have the time, but it will still be on my to-do’s.
  7. Organize the basement
    • Nope, but I at least put my desk together and set up my desktop computer. Little steps!
  8. Continue to donate and get rid of items
    • Already started another pile, I will gladly be adding more to it over time this month as well.
  9. Get some herbs for the porch and an Aloe plant for the house
    • I would have loved to do this, but the weather has been too cold for us to even have potted plants outside. On hold for now, so hopefully the weather is actually heating up….fingers crossed!
  10. Learn to make “Starbucks” style cold brew coffee at home
    • Did this too….in my own kind of way! I bought a wonderful cold brew coffee maker off Amazon. 12 hours in the fridge and then I have cold brew coffee. See below! It’s wonderful if you like cold brew coffee. I’ll do a little post with my coffee recipe…nothing fancy to be fair.
  11. Go for two walks a day
    • This has been hit or miss with the cold and rain, but I did try to accomplish this whenever I could. Will be continuing this though, really helps.
  12. Start an at-home full body weight training routine
    • I have made a workout plan and try to do this at least 1-2 times a week, but I’ve been focusing more on walking and eating healthy.
  13. Get my nails done
    • Yes! I did this wonderful electric blue that just popped!
  14. Create a cleaning schedule
    • Yup, did this one too and even included laundry days in the mix.
  15. Learn to use a Cricut
    • Not yet, but I need to. Something I really have to look into further.
  16. Write more
    • Not as much as I would have liked, but still striving to write more each month.
  17. Create a new wreath for spring
    • Not yet, but it’s on my to-do still. I need to pick up some specific florals.
  18. Try some new recipes
    • Yes, but didn’t like any of them. I preferred when I made things up this month. Every recipe I tried just seemed to fall flat and was pretty disappointed.
Cold Brew Coffee Maker

So a few things will go on my June to-do’s, but that’s okay. Hopefully June will be a shorter list and with better weather!

Zucchini Bread

I really wanted to make zucchini bread for a bunch of reasons. One is because I love zucchini and two I’m not entirely sure I made zucchini bread before. I honestly can not remember, but I’ve definitely had it before and thought it was DE-LIC-IOUS!

So, I got some zucchinis in the markdown section at a grocery store called Farmboy, but I got them for zucchini fritters. However, there were far too many for the fritters, so zucchini bread it was!

I found the recipe online, which I have linked down below after the photos, so I take no credit for the amazing recipe. But I HIGHLY recommend going and trying this one. I didn’t add the nuts, however I made one plain and one with chocolate chips. Both turned out wonderful and you all know that I have to put my little spin on things. I never follow a recipe completed….I know I’m insane! Just kidding, I just enjoy the trial and error to be honest.

Just so everyone is aware, I made these last Wednesday, so this post is a little late. Sorry!

So as you can see below, hot out of the oven, there are the two beautiful breads. The flavour was like a cinnamon bread, super moist and you really couldn’t taste the zucchini at all, just saw the little shredded strands throughout the bread.

Return of the…Mom-i

As you can tell, my attempt at a play on words kind of sucks and Star Wars would be sadly disappointed in me right now. I’m also not a Star Wars fan, I know I know! Please don’t come for me, does my love for baby Yoda count for anything?!

It’s been a tough couple of weeks to be quite honest. I’ve been terribly sick with food poisoning, heat stroke, Iron deficiency and even parasites (YUCK!). Not to mention just within the last few days, my husband and daughter have been pretty sick, we think it’s food poisoning, but not entirely sure. There is definitely something going around this summer. Regardless, it’s been a bit of a struggle.

But I’d like to talk about the more positive points, instead of all the negative ones. Valeria is loving her swimming lessons, we are enjoying the summer heat (when we can and aren’t sick), we are spending plenty of time with family, I’m trying out new recipes (and tweaking as I go) and I’m trying to catch up on reading everything!

Below are the blueberry muffins I made today and I will link the recipe, if you are interested in giving it a go. I didn’t end up doing the topping because I thought it may be too sweet for Valeria. They turned out absolutely delicious! I will tweak this a bit next time and do a bit of experimenting by adding a touch of lemon to it and probably substitute the granulated sugar for brown sugar. I used frozen wild blueberries, I just let them thaw a bit as per the recipe. I found the blueberries at Costco!

Next recipe on the agenda is a Macaroni salad. If anyone has a recipe suggestion for this, please let me know!

Runnin’ Around

Not much to report today, I was planning a different post, but thought this was a little more appropriate for the day. The day started fairly early for my husband since Valeria decided on an early morning today

The morning went by too quickly; breakfast, nap, walk, laundry folded, lunch and than out the door to run some necessary errands. We needed to pick up a gift for my sister-in-law and a card, return a package from Amazon and pick up some grocery items. When we got home, Valeria played a bit on her mat and than off for another nap, but it wasn’t very long. I took full advantage and started making homemade pizza. My husband started grilling up a steak for Valeria and I.

A few weeks ago we went to the farmers market to pick up some things and they had a sourdough vendor there. He was advertising all sorts of breads and than in the corner of his booth there was a tiny sign that said “Sourdough pizza dough – 3 for $10”. Well you know I had to try that! So that’s what I used tonight for the pizza, though not sure I did it quite right. I stretched out the dough, topped it with the roasted tomato and garlic sauce I made the day before (really easy if anyone would like the recipe…maybe I’ll just do a post!) and than toppings. I left it in the oven for about an hour, but the dough didn’t seem like it was cooking. After an hour and 20 minutes I took it out. My husband said it was delicious, my mother said the dough was still raw and I was like “Crap, I think I did this wrong….maybe don’t eat it…” With concern plastered on my face that I might give them food poisoning. If anyone has made sourdough pizza dough before and has tips, please let me a comment. Any help is appreciated. All in all though, for my first attempt, I was pretty happy with the results!

We were planning to leave for my mother-in-law’s today, but the day just got away from us so we opted for tomorrow morning instead. Just finishing off some laundry and getting some things ready for our family beach day tomorrow near my husband’s hometown and we’re all set! We’ll leave after Valeria has breakfast and hopefully she will be a happy camper in the car. She has not enjoyed long car rides recently, which is a new little phase she is going through. But I’m hoping it won’t last long too long.

New Butcher Shop and a BBQ

We’ve decided to find a local butcher shop for better quality meat instead of buying the packaged stuff in the stores. I’m not shaming anyone for buying meat from the supermarket, goodness I’ve done it for years. However, with having Valeria and my little health scare, I think it’s high time I start eating better and locally sourced when I can.

My husband did extensive research before finding this shop. We went in last week out of curiosity, and we spoke to the owner himself. He was European and immigrated to Canada, opening up his butcher shop to keep at his trade. He was shocked when he asked for organs, informing us that’s not a request he gets very often, but asked us why? We informed him it was for our little one and he immediately had options. He made a Highland sausage (he rarely makes it, but it can be requested) and he gave it to us for free to try. We also bought a bunch of burgers, oh man were they freakin’ tasty!

Today we decided to make another trip, and luckily he was there again. We bought a porter house steak, and Hungarian sausage (for Valeria), ground beef, some bacon burgers and we asked if he carries seasoning for Mici, it’s a Romanian dish and sooooooo good. He laughed and informed us he was making a batch now, apparently we are not the only ones who have been asking about it.

We also got on the topic of his meat source, what he puts in his sausages, mici, etc. He was straight forward, informed us he gets his meat locally from three different farms, letting us know the generic locations and he could name everything he put in everything he made in house; from the Hungarian sausage all the way to every kind of burger. He was more than happy to indulge us and let us know that he likes to make his meat products as clean as possibly.

I think he knew we were concerned about Valeria and what she was eating. A very kind man and reasonably priced. We have definitely made him our butcher for the foreseeable future.

My husband was thrilled to grill tonight and honestly, I’m so glad he enjoys it because it’s one less thing I have to do cooking wise. I love to cook, but barbequing is a whole other beast. We had a wonderful dinner of marinated chicken thighs (my own marinade….if you are interested let me know and I will post it!), mici, Italian potato salad (Another recipe I’d be happy to share if anyone is interested) and my dad wanted Hotdogs. Really tasty dinner to be honest and Valeria got to try Mici for the first time. So good!

We enjoyed the beautiful day otherwise with walks and little trips to the store, the day tired her out. She has been fast asleep for a while now.

Good Friday

I apologize for not answering to comments this weekend, unfortunately it’s going to be a bit hectic with the traveling and family time, but I promise I will get to them on previous posts!

Today all of my family members had off from work, they get Good Friday instead of Monday for Easter. We had already had plans with my husband’s side to spend the weekend, but we missed spending time with my family last weekend for….personal issues which I will get into at a later date.

Thankfully my mother and oldest brother decided we would have a get together today. Initially it was going to be dinner, but because we were to leave for my mother-in-law’s, I asked if we could have like a lunch instead. They happily obliged.

I wasn’t suppose to be the one to cook, but somehow I’m always delegated as the chef for all family functions these days. I really need to stop being a good cook, I could use a break occasionally. I personally would have made a much simpler spread, but my mother bought it all, so I cooked what she thought everyone would like.

Our tradition since we were kids was to eat fish on Good Friday. My Nonni (which is grandparents in Italian) were very religious and that what stemmed this tradition. I think I was the only one to follow this today in the family. I made the chicken chow mein dish (something I would have never made for today if it were me). Some salmon with cream cheese on bread, cod, all sorts of shrimp preparations, calamari, asparagus, vegetable pancakes, pita with hummus, rice and then later on dessert.

Now, I was happy to do all this and it was delicious, but I will admit my menu would have been a bit different. But everyone seemed to enjoy everything and it was an amazing time together. The kids got spoiled with chocolate and gifts, Valeria gifts and not so much chocolate. Though she did get a small package of Hershey Eggies which I ninja’d. My husband doesn’t know yet, but wait until he reads this!

I always forget to take pictures when I’m busy cooking and running around like a mad woman trying to make sure things are done and people are fed. I really need to start just snapping more photos and carrying my camera with me everywhere. Damn it! Speaking of that, I forgot to bring my camera to my mother-in-law’s. D’oh!

By around 6 PM, people were getting ready to leave and we really needed to hit the road before it got too late. Especially for Valeria. We left the city around 7 PM, making a quick pit stop for grumpy pants not wanting to be in her car seat. Quick diaper check (Niente), but man was she hungry. She wanted to be fed by my husband being held. Let’s just say it was a bit chilly for all that nonsense, though we did it anyway, enough for her to calm down and get back into her car seat. Then off we went. We saw quite a few cops along the way, but the drive on the highway was smooth. It was good and we made it in great time too. I love car rides and traveling, but man I could have napped the whole way! I didn’t sadly.

We made it safe and sound, my mother-in-law got to spend some good quality time with Valeria tonight. They were having a grand old time, laughing and playing together. It was really nice to see. Plus, my mother-in-law bought her a nice little summer outfit. I’ll take a picture when I can of it. It’s too cute!

Anyway the day was amazing and lots of good quality family time. I’m going to call it here because I’m utterly exhausted.

Saturday Family Fun

Today we travelled to see Nonna A, my dad’s mother, and my cousin and her husband. It was the first time my cousin and her husband were going to meet Valeria. We had asked them to be Valeria’s Godparents, so baptism to come in the very near future.

My husband got up early for a personal training session for Muay Thai with a friend of his at the gym, he has an amateur fight coming up in April. He’s getting all the training in that he can before it happens. I stayed with baby and got her things ready for the day: Bottles, onesies, diapers, burp cloth, toys, etc. She slept until about 8:15 AM, so it wasn’t too bad. I showered as she played with her mat (Thank goodness for play mats!), it was a quick one. My husband came home, showered and got ready for the day. We had a long day ahead of us, including a two hour drive to and from. Four hours of driving in total; I felt bad for my husband having to drive all that, thankfully he doesn’t mind.

We left a bit later than anticipated, but my parents were going as well, so they let my nonna know. Unfortunately, we had to take separate cars, car seats take up room. The drive wasn’t bad though, we took our time and no traffic jams, which was great. We have a toll highway, the 407, which we were able to take part way. That thing is heavenly and not many people are on it because of the toll. It was smooth sailing and we got there in exactly two hours.

We went up to her apartment, Valeria had just woken up a second time from her mini car naps, and was wide awake when they opened the door. Well, they were super excited to see; congratulating us and telling us how cute she is. My parents showed up shortly after we did.

Lunch was absolutely deeeeelicious as usual, Nonna A is the best cook. We had fettuccine with homemade sauce, along with the meat that was in the sauce and that was just to start. Then the second course consisted of chicken cutlets, peas and mushrooms sauteed, zucchini fritters and salad. We’re Italian, we love to eat! My husband and I got the left-overs, no one wanted them so nonna decided for us. Espresso, fruit and nonna’s famous pistachio cake was served as dessert.

We sat around talking and laughing all day, I took some photos for memories. It was really nice and I really needed that as a recharge. I’m always so happy after I spend time with my close family. The day passed too quickly sadly and it was 8 PM before we knew it.

We left at that point, Valeria was getting tired and a little cranky so we knew it was time to go. She passed out immediately in the car. Unfortunately, she woke up wailing like a banshee halfway through the drive and we had to make a pit stop. Once she calmed down and settled back in her seat, we were back on the highway, making it home by 10:20 PM. Now….she doesn’t want to sleep, she is so excited to be out of the car and home.

The day was wonderful, we got to spend a lot of quality time with my nonna, cousin and her husband. I wouldn’t have missed this for the world. I can’t wait to see them again in a few weeks for Easter. My cousin and I are very close (born on the same day, just different years!) and we are trying to make more of an effort to see each other more. Plus our husbands get along so well, so they bro it up whenever they are together. Joking and laughing the whole time. We are also making more of an effort to see my nonna as well.

Family is important and my everything, I am Italian after all!

Bonus – WordPress Prompt – How Can You Choose Just One?!

Now, I found this to be an interesting question and frankly not specific enough. I’m sure like most people you go through moods, phases, and different situations call for different drinks. Hard liquor, Wines, Beer, Cider, Water, Tea, Coffee (So many types I won’t even list them), etc. How do you choose just one?

So here is my break down and bare with me:

Everyday: I need coffee, it’s a requirement. If I could have an IV drip of coffee I would! I’m a coffee addict I admit. Plus it helps on those nights of insomnia or sleepless nights with the baby. The second is Water. Boring I know, but I genuinely enjoy water, plus if I get bored I usually add lemon or something for flavour.

Backyard hangouts/Campfire: I like hard ciders if I’m drinking alcohol because I don’t need to drink very many to say, “Okay, I’m done” and stop drinking, which is only 2 maybe 3. If it’s non alcoholic, then water or iced teas, mmmm delicious! I started making my own homemade iced teas last summer and I won’t go back to the store bought stuff again.

Family gathers/parties: Now clearly if I’m in the mood to drink, Wine with dinner, I am Italian after all! If I don’t drink any wine (or there is none haha too funny, that never happens), I will have an Old Fashioned or Whiskey Sour (usually have these when I’m with my husband’s family since my sister-in-law’s fiance used to be a bartender). In which case I will have max two and call it quits for the night. Otherwise, if it’s non-alcoholic drink: water or maybe a pop (or soda, if that’s what you call it in your country). Again, pop I’ll have a glass and call it quits.

Weddings: You’re probably thinking, ‘Huh? Didn’t we cover this?’, well no we didn’t. Weddings are different then family gatherings. At weddings, I will have a glass of wine with dinner generally, then wait a bit and have Vodka Cranberries for the remainder of the evening. Why? Because they usually water it down with ice, it’s not too sweet, it doesn’t bloat your belly or make you feel sick. Well unless you drink to excess, which I don’t. Water in-between and you’re golden. No hangover the next day as well.

Sickness: When I’m sick or feeling unwell in any way, especially with my tummy, it will always be Ginger Ale. NO, NOT SPRITE OR SCHWEPPES! It has to be Ginger Ale. Woo, sorry I got heated for a moment, it’s just a thing for me. Schweppes does not taste the same and sprite is too sweet and fake lemony flavour. It stems from childhood, we always got Ginger Ale when we were unwell, that and watching daytime television. Prices Right with Bob Barker, oh yay baby! Also, I really love herbal tea: Chamomile or Green tea with ginger and lemon.

I think I’ve covered all my major scenarios at least. Just know coffee is an always for me, any time, any where. Water is a must as well, though been slacking as of late. I’m not a big drinker, so I know my limit on alcoholic beverages are tops 4 in a night. I’m boring I know, but I’m in my 30’s with a baby, I don’t need to be drunk and hung over. That’s what my early 20’s was for.

Meeting Great Nonna!

Today was a good day, but a little bitter sweet.

I was woken up at 7 AM by Valeria having a tough morning and my husband exhausted, trying to soothe her. I took over for a while but in the end it was a team effort. My husband went back to bed, I however could not. Once I’m up, I’m up.

I laid in bed and watched Jersey Shore Family Vacation, yes it’s my guilty pleasure show, don’t even judge! After I went to get ready for the day. By the time I got ready, my husband was up and shortly after that, Valeria was up. Baby girl got a bath and got ready, she had a big day ahead!

Unfortunately, we had to leave when all of my husband’s family came over. I felt really bad, but we had plans with my nonna and Godparents. We quickly stopped to grab some pastries for everyone then we hit the road. It was about an hour drive to my nonna’s apartment.

When we arrived, we saw my godmother in the parking lot, we grabbed Valeria and everything from the car then proceeded up with my zia to the apartment. When we walked into the apartment there was my zio and nonna. I can’t tell you how thrilled I was to see them. I’m very close with my family and to not have seen them for 5 months has been difficult.

It was the first time they met Valeria and oh my goodness did they love and adore her! She was so smiley, silly and giggled so much, she was having a blast. My zio was constantly playing with her and to see my teeny tiny 5 foot tall nonna holding our very tall girl. It was so cute and I took a bunch of photos of my family holding and playing with her. It warmed my heart to watch them with her.

We had a deeeeelicious lunch of Pasta e fagioli, chicken cutlets with sauteed mushrooms, rapini, salad, roasted pepper salad and then dessert. I know everyone claims their grandmother or mom is an amazing cook, but I can’t explain how incredible of a cook she is. I need to learn from her so I can keep these traditions and recipes alive. We sat and talked, laughed and just spent some good quality time together, which I really needed. I love them so much and I hope Valeria grows up loving them just as much as I do. And I’m so thankful that she was at least able to meet her great nonna, my dad’s mother.

We spent pretty much all day with her and we left around 6:30 PM and got back to my mother-in-law’s apartment by 7:30. My husband’s siblings were still over and the kids running around playing. It was great to end the night spending time with them.

Though I have to admit that I missed my family. My husband could sense it. I let him know I want to make more of an effort to see them, at least once a month, especially my nonna. He agreed without hesitation.

The rest of the night was good, and Valeria got tired at 9:30 so we tried putting her down to sleep for the night. She is fake news! My husband left to help his brother and guess what happened…she rolled to her belly, rolled back to her side and then popped her little eyes open, saw me and started laughing! “You were asleep, go to sleep this isn’t funny…” in a half serious tone, which made her laugh even more. My husband walked in 5 minutes after it happened and he goes “She’s up?!” I explained what happened and he laughed. We took her back to the living room and just let her hang out with his mom and sister until his sister left.

Now, our little girl doesn’t want to sleep, she wants to play. But the whimpering eyes closed thing is new, which now indicates ‘I want my bottle and sleep‘. Hopefully she gets some good rest because tomorrow is another big adventure.
